You can safely put your hand inside a hot oven for a short time, but even a momentary contact with the metal walls of the oven will cause a burn. Explain.
The correct quantity involved is called effusivity (e):
e = sqrt (thermal conductivity x density x specific heat)
When two objects are placed in contact, the temperature of the contact point is closer to the temperature of the object with highest effusivity.
Since the effusivity of the metal is much higher than the effusivity of your skin, the contact temperature is close to the temperature of the metal.
In contact with air (very low effusivity) the contact temperature is close to the temperature of your body and you will not be burned
